When dining at a steakhouse, waiters will definitely ask what level of maturity you choose - rare (raw), medium rare, medium, or well done(mature). Most Indonesians will almost always answer "well done", because they are reluctant to eat half-cooked meat that still has red liquid. Even so, did you know that well done steaks turned out to have a bad impact on your blood pressure?

Why isn't steak eating well done?

Culinary experts from all over the world recommend the public to eat steaks with maturity medium rare (half cooked) not without reason. In addition to providing a more natural and delicious meat flavor, this level of maturity is considered safer for health. Why?

A study from Harvard University in the United States reported that baking meat matured triggered the release of various harmful chemicals that inhibit blood vessels and increase the risk of hypertension by up to 15 percent, rather than roasting meat only until half cooked.

Dr. Gang Liu, the author of the study, explained that free radicals are like heterocyclic aromatic amines (HAAs) and polycyclic aromatic hydrocarbons (PAHs) that are formed during the roasting processcan seep into the meat. Sthe longer the meat is baked, the more levels of chemical combustion contained in it.

In the body, these chemicals trigger oxidative stress which causes various cell damage in the body and damages the DNA code. This oxidative stress then causes inflammation of the arteries and triggers insulin resistance which affects the lining of blood vessels. In the end, oxidative stress is prone to various diseases, such as hypertension, atherosclerosis, stroke, and other heart diseases.

Not just steak well done. Eating fish or chicken baked with maturity is also at risk for hypertension

Yes. In addition to steak well done, researchers also found the risk of hypertension increased by 17% in people who ate overcooked fish and chicken meat15 times a month compared to people who consume meat less than four times a month.

This study was conducted by observing meat eating habits and maturity level preferences, as well as the development of blood pressure from 70 thousand participants over 16 years. At the beginning of the study, all participants were known not to have hypertension, diabetes, heart disease, or cancer.

However, within 12 years thereafter, as many as 37 thousand people reported having hypertension. The researchers found that the development of the disease was specifically related to how to cook the meat, rather than what kind of meat was eaten.

Then, how to eat meat healthily?

If you still want to eat meat without worry, then consider how you process it. Regardless of the level of maturity, cooking or baking is not really recommended. It is better to consume boiled meat to avoid the smoke from burnt products and use excess oil. But if you still want to enjoy steak, it's okay to eat it occasionally.

Then, choose healthy cuts of meat and a little fat for consumption and watch how much you eat meat. Also remember that everything that is excessive is not good for health. Combine with potatoes, broccoli or nuts so that your food is healthier and more nutritious. Also avoid consuming or not yet cooked meat.
