Resistant starch is a type of carbohydrate that cannot be broken down by digestive enzymes so it cannot be destroyed. Per 100 grams of raw banana (which is still green) contains 8.5 resistant starches, while yellow banana contains only about 1.23 resistant starches.
The more resistant starch contained in a food, the less calories. Not only that, reported by the British Journal of Nutrition, resistant starch intake can behelp you feel full longer, reduce blood sugar, and maintain a healthy digestive system.
Meanwhile, the sugar in yellow bananas is stored in simple forms such as sucrose, fructose and glucose. Simple sugars are easily broken down by the body, making it easy to raise blood sugar. So people with diabetes are actually not advised to eat too many yellow bananas considering the sugar content is quite high.
2. Fat content
Mature bananas contain less fat (monounsaturated fat /mono unsaturated fat and plural unsaturated fats /polyunsaturated fat).
Both types of fat include healthy fats that maintain good HDL cholesterol levels while reducing LDL bad cholesterol levels, which can reduce the risk of heart disease. Research also shows that these two good fats are useful for controlling insulin levels and blood sugar levels which will reduce the risk of type 2 diabetes mellitus.
The amount of good fat in the yellow banana includes very little, only about 0.1 gram. However, green bananas contain absolutely no fat. It seems like a ripe banana is slightly superior to a raw banana in this case.
