Because, if your scalp tends to produce excess sebum, then, your scalp and hair will be more oily so you need to wash your hair with shampoo every day.

And, if there is an assumption that washing your hair every day can dry your scalp or hair follicles, this is not right because until now there has been no scientific evidence that reinforces this assumption.

Each type of hair has different needs

If your hair type is dry or damaged, it might be better (and really might be healthier) if it's not washed every day, because the natural oils of the scalp will have more time to work optimally through the hair. Or, if your hair is colored, it will be more prone to damage if washed every day because your hair is more porous. Also, if your hair is thick, curly or wavy, it's better if you don't wash it too often compared to if your hair is straight or thin curls.

Reducing shampoo won't make your hair dry

One claim of movement without shampoo is that after you stop using shampoo regularly, oil production will slow down and your hair will naturally produce less oil. But this is not true, because the production of sebum or hair oil is influenced by various things including hormones, diet, and genetics. So, washing your hair without shampoo won't slow down the oil production in your hair.

You still have to wash your hair regularly

If you take part in the movement not using shampoo, it doesn't mean that you don't wash your hair at all: You might be able to replace the shampoo used to wash your hair with natural alternatives such as baking soda or apple cider vinegar. But what you should know is that not all natural alternatives are healthy for daily use, including the use of baking soda to wash your hair because both shampoo and baking soda are both alkaline, which can damage your hair or make your hair drier or brittle.
